Administratively, Jackson has proven her ability to develop and grow programs. She began and expanded the first fitness and wellness programs at the University of Delaware; was the University of Miami's first wellness director, and led the Indian River Community College Health Science Division as its first full-time dean. A strong educator, Jackson held an assistant professor position in Delaware's Fitness Management programs, and faculty appointments in the University of Miami's schools of Medicine and Nursing.

At Clemson Dr. Jackson works daily with student-athletes, coaches and staff to address individual and team issues related to improved athletic performance, particularly in the area of nutrition, and has been honored by the Institute for International Sport as a sports ethics fellow. In 2011, Dr. Jackson assumed duties as the administrator for the men's and women's cross country and track and field programs. A member of the NCAA Health and Safety speakers list, she travels to various NCAA institutions to address student-athletes and coaches on Performance Nutrition. Dr. Jackson recently published "The Nutrition Playbook: A Practical Guide for Parents and Coaches of Growing Athletes."
